做法:洗(xǐ )净宰好(hǎo )鲫鱼(yú ),洗净(jìng )淮山(shān )和薏(yì )米(mǐ )。用(yòng )清(qīng )水把陈皮泡软,拍裂一小块姜,热锅,用姜块在锅上(shàng )擦一遍,放(fàng )两(liǎng )勺(sháo )油(yóu ),待油(yóu )六成热下(xià )鱼(yú ),煎至(zhì )微黄。煮沸瓦煲里的清水,放入(rù )煎煮(zhǔ )好的鲫(jì )鱼和其他材(cái )料,武火煮沸,转中小(xiǎo )火煲一个(gè )半小时(shí ),下盐(yán )调味即(jí )可(kě )品(pǐn )尝。
