做(zuò )法:洗净宰好(hǎo )鲫鱼,洗净淮山和薏(yì )米。用清(qīng )水把陈皮(pí )泡(pào )软,拍(pāi )裂(liè )一(yī )小块姜,热锅(guō ),用(yòng )姜(jiāng )块在(zài )锅上擦一遍(biàn ),放两(liǎng )勺(sháo )油,待油六成热(rè )下鱼,煎至微黄。煮沸瓦煲里的清水,放入(rù )煎煮好的(de )鲫鱼(yú )和(hé )其他材料(liào ),武火煮沸,转中(zhōng )小(xiǎo )火煲一个(gè )半小时(shí ),下盐调味即(jí )可(kě )品尝(cháng )。
