做(zuò )法(fǎ ):春(chūn )笋切成片后加少许(xǔ )盐捞出后用清(qīng )水浸(jìn )泡(pào ),生姜切片(piàn ),葱(cōng )切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生(shēng )姜、春(chūn )笋(sǔn )、牛肉片(piàn )、葱(cōng )段(duàn )翻炒1分钟左右(yòu )。再加入生(shēng )抽、老抽、蚝油翻(fān )炒均(jun1 )匀,加入(rù )少(shǎo )量清水半掩住春笋,盖(gài )上锅(guō )盖大火(huǒ )煮(zhǔ )开后转中火。煮(zhǔ )到(dào )水快熬干的时候(hòu )加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖(gài )焖。
