做法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮泡软,拍裂(liè )一(yī )小块姜,热锅(guō ),用(yòng )姜块在锅(guō )上擦一遍,放两勺(sháo )油,待(dài )油六成热下(xià )鱼,煎(jiān )至(zhì )微(wēi )黄(huáng )。煮(zhǔ )沸瓦煲里(lǐ )的(de )清水(shuǐ ),放入煎(jiān )煮(zhǔ )好的鲫(jì )鱼和其他(tā )材料,武火煮沸(fèi ),转(zhuǎn )中小火煲一(yī )个半(bàn )小时,下盐(yán )调味(wèi )即(jí )可品(pǐn )尝。
